Celiac disease is a digestive and autoimmune condition. When individuals suffer from celiac disease, it causes damage to their small intestine when gluten is ingested. Gluten is a protein that is commonly found in wheat, rye, and barley. Surprisingly, gluten is also found in many premade taco seasonings and other foods that can be stored on a shelf. 

Celiac disease and gluten sensitivities show symptoms after eating bread, pasta, or wheat-based products anywhere from a few hours and up to 3 days after consumption.
