
Ingredients
- 1 pound just like turkey ground meat (previously hydrated)
- 1 cup of vegetable broth.
- 1/2 onion, diced
- 1/2 green bell pepper, diced
- 1 cup of peas
- 2 tablespoons minced garlic
- 1 medium russet potato, chopped
- 2 tomatoes
- ½ onion
- salt and pepper to taste
- 1 teaspoon cumin
- 1 teaspoon paprika
- Chopped cilantro or green onions for garnish
Instructions
- Hydrate your “just like turkey ground mix†with 1 cup of hot vegetable broth.
- Mix and blend the 2 tomatoes with ½ the onion to create a paste.
- In a skillet over medium heat, add oil and add the soy ground beef.
- Add chopped onions to the ground soy ground beef.
- Stir the onions, bell peppers, and browned soy ground beef until the onions are softened. Add the minced garlic and stir for about a minute.
- Add diced potatoes to the soy ground beef and onions. Stir in the diced (in small pieces) potatoes.
- Add the Flavor. Add the tomato sauce, and add the cumin, paprika, salt, peas and pepper, and stir.
- Cover and simmer for about 20 minutes. Garnish with chopped cilantro or chopped green onions before serving
